How do you like it?

RARE:
Cook for 15 minutes per lb

MEDIUM RARE:
Add 15 minutes’ cooking time

WELL DONE:
Add 30 minutes’ cooking time

Preparation

Weigh the joint and make a note!

Ballavair Galloway Beef is best cooked from room temperature. Dust with plain flour and rub with freshly ground black pepper.

Method

Pre heat the oven to 245ºC (475ºF).

Seal the joint by searing in a hot oven.

Moisten roasting tin with oil and place in the oven. After 20 minutes, lower the temperature to 190ºC (375ºF) and cook for 15 minutes per lb, adding cooking time according to preference.

Baste the meat during cooking by spooning the meat juices over the joint

Try to plan ahead and leave 30 minutes for the meat to relax before serving.
